The Ultimate Brunch Frittata
Made with Branston Beans
Ingredients
Serves 6 (as a small dish) or 4 as a main meal
250g Branston Beans
4 eggs
25g diced red pepper
25g diced green pepper
100g roasted diced sweet potatoes (see below)
25g diced white onions
60g grated extra mature cheddar cheese
Pinch of salt
Pinch of cracked black pepper
1 tsp cooking oil
Roasted sweet potatoes
100g peeled & diced sweet potato
1 tsp cooking oil
Pinch of salt
Pinch of cracked black pepper
¼ tsp smoked paprika
Pinch of ground cumin
0.5g garlic puree
Method
- For the roasted sweet potatoes: Preheat the oven to 180c (fan).
- Place all ingredients in a bowl and mix together until the sweet potato is coated in the spices.
- Put this onto a lined baking tray and roast for 20 mins.
- After this, remove from oven and place to one side to cool.
- For the frittata: In an oven-proof non-stick frying pan over a medium heat, place cooking oil, red peppers, green peppers, onions, salt & pepper. Fry for 5 – 10 minutes until the vegetables soften.
- Add smoked paprika and roasted sweet potatoes – fry for a further 5 minutes to warm the sweet potatoes.
- Add Branston Beans and bring up to temperature.
- While the beans are heating up crack the eggs into a bowl and beat them along with the grated cheese.
- Increase the heat to high and pour the egg mixture into the pan.
- Briefly stir the egg into the other ingredients to ensure a good mix.
- Place the pan into the oven and cook at 180c fan for 15 – 20 minutes or until the egg has set.
- Carefully remove the frittata from the pan, slice into pieces and serve.
