Branston Bean Pizza

Ingredients
For the pizza base (makes 2 pizza bases):
182ml cold water
9g salt
10g fresh yeast
304g 00 pizza flour
For the pizza toppings:
235g Branston Beans
50g streaky bacon
70g Cumberland sausage
90g mozzarella (grated)
60g extra mature cheddar (grated)
30g American mustard
Method
- Put 2/3 of the water in a bowl and bring the other 1/3 to the boil, then mix the two.
- Into the water, whisk the yeast and salt until the mixture is combined.
- Next, put the flour in a bowl and add the wet mixture, stirring with a wooden spoon until the dough begins to come together, then mix with your hands until a large dough ball forms.
- Lightly flour a surface and knead the dough for around 10 minutes – until it becomes firm and stretchy.
- Put the dough ball back into the bowl and cover it with cling film. Leave to rest until it has doubled in size (around 2 hours).
- Once risen, separate the dough into two equal-sized balls and pop them into different bowls. Cover both bowls with cling film and leave to rise again until each ball has doubled in size.
- Now grill the streaky bacon and cook the sausages in the oven for around 15-20 minutes until golden and cooked through, then allow to cool, slice into chunks and place to one side.
- Time to make your bases! Flour your work surface (and hands) well. Using your fingertips, gently press in from the centre of the ball out to the edges until you form a disc shape.
- Then pick your disc up by the edges with your fingertips and let it hang down, like a curtain, and gently pinch along the edge of the dough as you rotate the based around, letting gravity stretch the pizza out for you. You want the dough to be nice and thin, almost see through. Be careful not to tear it though!
- Next, preheat the grill to its highest setting.
- Then put a frying pan on the hob on a high heat. Once the pan is very hot, place your pizza base into it.
- While it’s in the pan, top the pizza with the Branston Beans, making sure to spread evenly across the base, but leaving a couple of centimetres around the edge so you get a nice crust. Then add the mozzarella and cheddar cheese, as well as the cooked bacon and sausages.
- Once the base has browned (1-2 mins), put your pan under the grill on the highest shelf. Grill for a couple of minutes – until your crust has taken some colour.
- Once the cheese has melted, drizzle with American mustard and enjoy!
