Delicious, rich and gooey, this gorgeous Mac ‘n’ Cheese recipe is a family favourite, loved by both children and adults. It uses a combination of beans and cheeses to create a comforting dish perfect for dinner.
Baked Mac ‘N’ Cheese
Made with Branston Beans
Ingredients
Serves 2 as a main or 4 as side
200g cooked macaroni
50g plain flour
50g salted butter
750g whole milk
100g extra mature cheddar
½ tsp mustard powder
6g Dijon mustard
50g grated mozzarella
Pinch of cracked black pepper
Pinch of salt
20g grated parmesan
For the beans:
380g Branston Beans
1 tsp smoked paprika
15g tomato puree
50g BBQ sauce
For the crumb:
50g grated parmesan
50g panko breadcrumbs
2 tsp cooking oil
10g chopped chives
Method
- For the sauce: Melt the butter in a pan over a low/ medium heat.
- Add in the flour, mustard powder, salt & pepper. Stir in until the mixture is smooth, and all lumps have gone.
- Slowly add in the milk and stir it into the flour mix a bit at a time until it is all mixed in and smooth.
- Add the cheddar, mozzarella, Dijon mustard and parmesan.
- Leave the sauce to cool.
- For the Mac n Beans: In a bowl mix together the beans, smoked paprika, tomato puree & BBQ sauce.
- Next, mix the cooked macaroni with the cheesy sauce, then fold the beans mix through it.
- Put the pasta and the bean mixture into an oven proof baking dish.
- In a separate bowl, mix together the grated parmesan (for the crumb mix), panko breadcrumbs, cooking oil & chopped chives.
- Sprinkle the crumb mix over the top of the macaroni mix.
- Bake in the oven at 180c fan for 25 – 30 minutes until the crumb has browned.
