This recipe takes a classic British meal and injects the flavours of Mexico for a stunning twist. This dish makes for an amazing lunch or dinner and is great for the entire family.
4 baking potatoes6 tbsp olive oila pinch of salt3 tsp freshly ground black pepper100g of grated cheddar cheesesour creamsalsaa handful of chopped coriander
And don't forget the special ingredient...
1x410g tin of Branston Baked Beans
Preheat oven to 180c.
instructions for step 1.
In a bowl, toss potatoes with oil, salt, and pepper until completely coated. Place on a baking sheet and bake until fork tender – this should take about 60 minutes.
Divide the cheese, Branston Baked Beans, sour cream and salsa evenly among the potatoes.
Garnish with chopped coriander.
