Mexican Jacket Potatoes

This recipe takes a classic British meal and injects the flavours of Mexico for a stunning twist. This dish makes for an amazing lunch or dinner and is great for the entire family.

Serves: 4
Ingredients

4 baking potatoes
6 tbsp olive oil
a pinch of salt
3 tsp freshly ground black pepper
100g of grated cheddar cheese
sour cream
salsa
a handful of chopped coriander

And don't forget the special ingredient...
1x410g tin of Branston Baked Beans

Step 1

Preheat oven to 180c.

Step 3

In a bowl, toss potatoes with oil, salt, and pepper until completely coated. Place on a baking sheet and bake until fork tender – this should take about 60 minutes.

Step 4

Divide the cheese, Branston Baked Beans, sour cream and salsa evenly among the potatoes.

Step 5

Garnish with chopped coriander.
